Vinification:
The just-harvested grapes are partially subjected to soft pressing (white vinification) and partially vinified with skins. The must is separated from the skin through decantation, under cold temperature conditions. Fermentation takes place under controlled temperature.

Spirit 13 % - Total Acidity 5,5 g/l
Maturation:
5/6 months in the producer's stainless steel vats in contact with thin dregs.
At least a one-month refiniment in bottle.
Duration:
2/3 years (thoungh it is preferably tasted in its first year).
Appearance:
Lively straw-coloured.
Bouquet:
Wide aromas of musk, sage, citrus fruits, yellow peach.
Tasting note:
Complete, elegant, tasty, pleasantly aromatic. Rather long, suitably alcoholic.
Serving suggestions:
Mainly fish-based and sauce meal, shellfish, also suitable to soups, veloutè, white meats.
